About the Coffee: A coffee that always leaves us with a smile. The Ija'tz Cooperative's natural just has so many layers of wonderful flavors. When we brew this incredible natural from the foothill of Lake Atitlan we are tasing When brewed over a simple drip machine we are getting some wonderful notes of warm fruits such as apple, following with smooth baking chocolate and ends with a cinnamon/black pepper twist!
We have enjoyed this coffee with other brewing methods such as espresso but believe it is best served black. Please make sure to let it sit to cool down so it can fully express itself.
About the Producers: The Ija’tz Cooperative, located in the picturesque foothills of volcanoes near Lake Atitlán, is more than just a coffee producer—it’s a testament to resilience, sustainability, and tradition. Founded in 1995, Ija’tz, meaning “seed” in the Maya Kaqchikel language, symbolizes life, regeneration, and a commitment to protecting the environment.The cooperative grows arabica coffee under native shade trees, blending ancient Maya agricultural practices with modern techniques.
